For a super simple taste of Ecuadorian cuisine, put some popcorn on top of your soup! Any type of soup works, but Ecuadorians especially like this on potato soup (locro de papa) and cold shrimp soup (ceviche). If you want to try making locro de papa, there's a recipe here that uses ingredients you can easily find in the US except maybe achiote powder. You can replace that with paprika.
